Day 19: Skinny, Mouth-Watering Manicotti

Alright!  This recipe is seriously the bomb and it is very low calorie for pasta!!!  This has to be my all time fav healthier/skinny recipe!  This is a HUGE fav of the hubby and he eats ALL of the leftovers for this one!!

This recipe does take a little longer to prepare, but it's soo worth it, let me tell you:)  This is what you need to make this delicious dish:
Skinny, Mouth-watering manicotti



Ingredients:
- 10 cooked manicotti noodles
 - 1 1/2 cs of chopped onions
- 1 lb of sweet turkey italian sausage
- 1 c of green peppers
- 2 tlbsps of butter
- 2 tlbsps of flour
- 2 cs of 1% milk
- 1/8 tsp of black pepper
- 1 1/2 cs of shredded part-skim mozzarella cheese
- 2 cs of tomato-basil pasta sauce
- 1/4 c of Reduced Fat Parmesan cheese

Ingredients
First, you need to chop up your peppers and onions.  Then put them in a frying pan with about 2 tlbsps of butter. 
Chop the peppers and onions
Start to saute the peppers and onions!  After the onions and peppers are sauteed then add in your turkey meat and cook thoroughly.
Put peppers and onions in frying pan with a little butter to saute.
As the peppers and onions are sauteing, grab of pot and cook your manicotti noodles.
Cook noodles
Melt the butter over medium heat, and then add in the flour, stir until it is completely mixed.  Add in the milk, bring to a boil,  and whisk the mixture for 7 minutes.
Whisk mixture together
Once the mixture is creamy then you can stop and measure out 1/4 of a cup and add it to the turkey mixture.
Nice and creamy!

Spray a 13 x 9 baking dish with Pam.  Spoon about 1/3 of c of the turkey mixture into the manicotti noodle.  Place filled noodle into the baking dish.
Stuff noodles with turkey mixture

Sprinkle mozzarella cheese on top

Add white sauce mixture
Add the tomato sauce and the Parmesan cheese!

Bake at 350 degrees for 30 minutes and serve!
