Cranberry Almond Spinach Salad


YAY for the weekend and it's a 3 day weekend for this girl:)  I get off President's Day...woohoo!!!  This week seemed to take forever to get to the end.

On Vday, I tried a recipe for a new salad that I have never made before and it is yummy!  It's pretty simple to whip together and doesn't take much time either:)


Cranberry, Almond Spinach Salad




Ingredients:
- 1 tablespoon of butter
-3/4 c. of silvered almonds
-1 c. dried cranberries
-2 tablespoons toasted sesame seeds
- 1 tablespoon poppy seeds
-1/2 c of white sugar
-2 tsp. minced onion
-1/4 tsp paprika
-1/4 c. white wine vinegar
-1/4 c. cider vinegar
-1/2 c. vegetable oil
All the ingredients, except the sugar


Directions:
1.  In sauce pan, melt butter over medium heat.  Cook and stir almonds in butter until toasted.  Remove from stove and let cool.
Toast the almonds
2.  In a big bowl, mix the spinach, toasted almonds, and the cranberries together.
3.  In a meduim sized bowl, mix together the seasame seeds, sugar, onion, poppy seeds, paprika, white wine vinegar, vegetable oil, and cider vinegar.  Toss with spinach right before serving.

It really was the perfect mix between sweet, crunchy, and tangy!  I would definitely recommend this salad:)  Hope you enjoy your Friday!!!
