YAY for the weekend and it's a 3 day weekend for this girl:) I get off President's Day...woohoo!!! This week seemed to take forever to get to the end.
On Vday, I tried a recipe for a new salad that I have never made before and it is yummy! It's pretty simple to whip together and doesn't take much time either:)
Cranberry, Almond Spinach Salad |
Ingredients:
- 1 tablespoon of butter-3/4 c. of silvered almonds
-1 c. dried cranberries
-2 tablespoons toasted sesame seeds
- 1 tablespoon poppy seeds
-1/2 c of white sugar
-2 tsp. minced onion
-1/4 tsp paprika
-1/4 c. white wine vinegar
-1/4 c. cider vinegar
-1/2 c. vegetable oil
All the ingredients, except the sugar |
Directions:
1. In sauce pan, melt butter over medium heat. Cook and stir almonds in butter until toasted. Remove from stove and let cool.Toast the almonds |
3. In a meduim sized bowl, mix together the seasame seeds, sugar, onion, poppy seeds, paprika, white wine vinegar, vegetable oil, and cider vinegar. Toss with spinach right before serving.
