Skinny Chicken Quesdilla!

Yes, you read that right, a skinny chicken quesadilla!  I love me some Mexican food and quesadilla's are probably one of the best food inventions ever, to me anyways:)  I made this a while ago and just haven't gotten around to sharing the simple recipe with you all!

Skinny Chicken Quesdilla
Ingredients
This is a fairly simple and easy recipe!  All you need is:
- 1/3 less fat cream cheese
- 2 cans of cooked, cubed chicken
- 2 cans of Rotel's diced tomatoes and chile's
- Fat free Mexican cheese
- Whole grain tortilla shells

In the pic above, I didn't use whole grain tortilla shells or fat free Mexican cheese because at the time 1. I wasn't eating healthier and 2. our local grocery store didn't carry those particular items. 
Add all ingredients in pan
Put all of those ingredients, except the tortilla shells in the pan, stir, and heat up!

Then put about 1/3 c of the mixture onto a tortilla shell and fold the shell in half.  Spray a frying pan with Pam.  Next, push down with your flipper on the tortilla shell, to get the "browned marks" of a quesadilla.

After it's flipped over it will look something like this!

This is making me really hungry, right about now!  After it's browned to your liking, take the quesadilla out of pan and place onto plate to serve!  I cut my quesadillas in half to make for easier eating!
