Raspberry Surprise

I'm soo excited that it is Thursday because that means that I have my 4 day weekend to look forward to:)  I will be spending time with family and friends, and start a little Spring cleaning!  Do any of you have any plans over Easter weekend?

I still haven't shared with you all what else I made last Friday for dinner!  Like I posted last Friday, I wanted to make a dessert that was summery and I choose to make, what I call, Raspberry Surprise!!!  This recipe takes a while to complete it, mainly because it has to set up, bake, and setup, but it's well worth it:)

It doesn't take too many ingredients:

2 cs of pretzels (broken into pieces)
1 large box of raspberry Jell-o (6 oz)
1 c of sugar
1/2 c of butter, melted
1 container of Cool Whip whipped topping(8 oz)
2-3 cups of frozen or fresh raspberries
3 Tblsps of sugar
2 cups of boiling water
1 package of cream cheese (8 oz)
Ingredients

If you wanted to cut back on the calories then you put in sugar free Jell-o, light Cool Whip and cream cheese.

First you must combine broken pretzels, butter and sugar.  I used a big zip lock baggie and put all of those ingredients in there and shook it up.  Put into a 9 x 13 pan and bake at 350 degrees for 7 minutes.  Let that cool off and then continue to the next step.

Add ingredients listed above to bag and shake.
Then, in a mixing bowl,  put in sugar and cream cheese until it's smooth.  Add in cool whip as you are mixing it.  Take this mixture and spread on top of the pretzel layer.

Mix it up!
Last, Mix together Jell-o, boiling water, and raspberries.  Let cool and set for a little while.  Put this mixture over top of the cream cheese layer.  Set in fridge until it is firm.

Boil


Overall, this recipe is easy, but does take a little longer than I thought that it would because you have to wait a while for the first layer to cool down and then you have to wait for everything to set up.  One thing to keep in mind, is that the crust doesn't stay crunchy for too long.  I made it very late on Thursday night and by early Friday night it was just starting to get a little soogie.  Make sure you serve and eat this dessert within 2 days tops.
