Hope you all had a fab weekend! I sure did:) My friends and I celebrated this weekend because one of my friends, Tiff, has been looking for a job in her field for going on 8 months and she just got a call on Friday saying she got it! We had to celebrate her job. I will update you tomorrow what we did for that and the other fun things I did this weekend, but for now I wanted to share with you this yummy Lighter Crispy Cheddar Chicken I treated the hubby with:)
You can find the original recipe here on Jamie Cooks it Up!! I tweaked the recipe a little to make it lighter and I guess just that much healthier.
I substituted : Ritz Crackers for reduced fat Ritz Crackers, 1% Milk, reduced fat cheddar cheese, cream of chicken soup for 98% reduce sodium and fat free , light sour cream. At least I subbed for all of the ingredients that I could! Even though I substituted those ingredients for the regular ones, it was delish and had lots of flavor!!!
I served the baked chicken with a baked potato:)

I used 4 chicken breast for this recipe and I had a lot of the toppings let over! I think you could probably cut back on the cheese and the Ritz Crackers. Maybe instead of 2 sleeves of Ritz Crackers, maybe only one.
