The cupcakes were easy, but took about 2.5 - 3 hours to make and didn't get started until 7 o'clock at night! So, by the time I had all the cupcakes ready to go, I still had to clean up and didn't get to bed until 11:30 or midnight! Oh well, it was worth it! They are soo moist, and delicious!
Now, on to the best part, the recipe and mouth-watering pictures:)

I found this recipe from this website. I made some changes to the recipe, to try to cut back on the calories(even though, it didn't help much:-/ )
In order to make these delightful cupcakes, you will need:
For the Chocolate Cake:
1 box of Devil's Food cake mix1/2 c of oil
1 c of light sour cream
3/4 c of buttermilk
1 tsp of cinnamon
1 tsp of vanilla
For the buttercream frosting:
6 tblsps of butter8 oz of light cream cheese
3 c of powdered sugar
1 tblsp of heavy cream or milk
1 tsp of peppermint extract
2 or 3 splashes of green food coloring
For the mint filling:
2 tblsps of heavy cream1/3 c of chocolate chips
1 tsp of peppermint extract
1/4 c of powdered sugar
Directions:
1. Preheat oven to 350 degrees.
2. Mix together all of the ingredients for the chocolate cake. Try to get out all of the lumps in the batter, but don't over mix.
3. Place the cupcake liners into the cupcake pan. Then spoon in the batter until 2/3 of the cupcake liner is filled. Put in oven for 15-17 minutes.
4. While that is baking, you will start to make your mint filling. Take out a small pot and put the heavy cream and chocolate chips into the pan on low to medium low heat. Melt completely. Then stir in the peppermint extract and the powdered sugar. Put filling into a squeeze bottle and once cupcakes come out of the oven squeeze the filling into them:) just like the pictures show!

5. Take cupcakes out of pan and let cool. While waiting for them to cool grab your ingredients for your frosting and whip your frosting together.
