Baked Onion Rings!

One of my favorite foods, hands down, is onion rings!  I know they have the tendency to give you bad breath, but it's soo worth it!  I don't know why I love them so much, but I do, it's a problem of mine:)  I found some delicious looking home-made onion ring recipes to try on Pinterest and the one I chose was this one from Annie's Eats:)

I changed it up just a tiny bit because I couldn't find one of the ingredients it called for!

Ingredients:
1/2 C of flour divided
1 large egg
1/2 C of buttermilk
1/4 tsp. of cayenne pepper
1/2 tsp. salt
1/4 tsp. pepper
1 1/2 sleeves of vegetable Ritz crackers
4 C of kettle cooked potato chips
2 large onions
6 tbsp of canola oil

Preheat oven to 450 degrees.  In a shallow baking dish, such as a bowl, measure 1/4 of a cup of flour.  Grab another bowl and mix together the egg and buttermilk.  Next add in your remaining dry ingredients ( flour, cayenne pepper, salt, pepper).  Take out your food processor and put in the Ritz crackers and the potato chips until they are finely ground.

I have to say, this was my first time using our food processor and I've had it since our wedding in July!  It took me a while to figure this thing out!  When I did though, it worked wonderfully:)  Take your Ritz and potato chip mixture and place in a casserole dish.  Slice your onions to about 1/2 inch thick.  Dip your onions into the flour then into the liquid mixture.  Lastly,  dip it into the crumb mixture and place on to a greased pizza/cookie sheet pan!

When pan is full, set timer for 8 minutes and then after the time is up flip your onion rings over.  Then set the timer for another 8 minutes.  They are ready to serve and enjoy:):)

    1. Yes, I was happy that I found one that didn't have to be fryed! At home, I try not to do that, just to make it a little healthier and because I hate the smell that frying leaves behind!
