Austrian Raspberry Jam Cookies!

I can remember when I was growing up, that my mom would make this petite, and refreshing cookies, but I just never got around to making them.  This year I did though:)  They turned out wonderful and here is the recipe for you all to try, if you would like!




Ingredients:

1 1/2 cs flour
1 c raspberry jam
2/3 c chopped almonds
1/2 c butter
1/2 c white sugar
1 egg yolk
1 tsp of vanilla extract

1.  Take a bowl, mix together the butter and sugar.  Add the vanilla and egg yolk; mix until light and fluffy!  Add the flour and put in fridge for 2 hours.

2. Preheat oven to 300 degrees.  Spray the cookie sheet with Pam.


3.  Grab some of the dough out so it is about the size of a ping pong ball and roll it.  Then take a cup and add a little bit of water in it.  Dip your hand into the water first and wet the dough, then roll the ball of dough in the chopped almonds.  Next, with your finger push down on the ball of dough right in the center.  Then take the raspberry jam and fill it in the center of the cookie.  Bake the cookies about 17 minutes.  You will want the cookies to be a little golden brown on the bottom.  Let cool and serve:)

This is a great recipe for something that is lighter and isn't as rich as some of the goodie recipes I have on here.  Hope you enjoy them!!!
