Lighter Fiesta Lime Chicken:)

Oh Yes, you read that right!!!  Lighter Fiesta Lime Chicken, like the kind you can order from Applebee's and it is so, so good!  I like to think of it as mouth watering, but with a whopping 1,280 calories and 47 grams of fat, I have to skip it; not any more:) If you have made a New Year's resolution to eat healthier then this recipe is for you and you should definitely pin this baby!!!

This is what you will need in order to make this delectable dish(get ready, it is a LONG list!):

 4 chicken breasts

Marinade Sauce:
1/2 c water
1/3 c teriyaki sauce
2 tlbsps lime juice
2 tsps minced garlic
1 tsp liquid smoke
1/2 tsp salt
1/4 tsp ground ginger
1/4 c tequila

Mexi-Ranch sauce:
1/4 c light mayonnaise
1/4 c light sour cream
1 tlbsp 1% milk
1 1/2 tsp white vinegar
1 tsp minced onion
1/8 tsp dried parsley
1/4 tsp Tabasco sauce
1/8 tsp salt
1/8 tsp dried dill weed
1/8 tsp paprika
1/8 tsp cayenne pepper
1/8 tsp cumin
1/8 tsp chili powder
1 dash pepper
1 dash garlic powder

1/4 c 2% Mexican cheese blend
1 c baked corn tortilla chips

First, you will need to combine all of the marinade sauce ingredients together.  Then take your chicken breasts, place them in a bowl or container of some sort, and pour marinade sauce in with the chicken.  I like to poke holes in the chicken with a fork, so the sauce will really soak in the chicken.  Place the bowl in the fridge for at least 2 hours, but no longer than 3!

Then take all of your ingredients for the Mexi-Ranch sauce and stir them together.  Once you have it combined then put in fridge to chill.

Grill your chicken, until fully cooked.  Put the grilled chicken breasts on a cooking sheet, scoop the Mexi-Ranch dip on top of the chicken and sprinkle on your cheese.  Preheat your oven to broil.  Broil the chicken for a couple minutes or until the cheese has completely melted and is bubbly.

Grab a plate and sprinkle on your baked corn tortilla chips.  Then place your chicken breast on top.  I always serve this chicken with a side of rice!!!  This is truly and tried and true recipe, everyone that tries it falls in love with it:)

I hope you enjoy this dish!!!  It really doesn't take too much prep time, but it does take a while for the marinade to soak in, so just make sure you leave time for that!
